Malvasia de Sitges - Cultivare
Malvasia is a small white grape variety, very sweet and aromatic, from which we obtain a fresh and perfumed wine with fruity and floral notes.
Originally from Greece, malvasia spread throughout the Mediterranean until it reached Sitges, where it came to occupy a quarter of the cultivated land in the 18th century. It was so popular that it is even mentioned in the 1490 chivalric novel "Tirant lo Blanc".
It has practically disappeared today and can only be found in small plots of land, making it a privilege to enjoy this wine, a legacy of tradition and know-how.
Malvasia de Sitges de Vallformosa is an organic wine, fresh and with good acidity with aromas of fresh white fruit, such as apple and pear, combined with tropical notes. In the mouth it leaves hints of white flowers.
It is an ideal white wine to accompany white meats and all kinds of mild fish.
VINTAGE 2019
HARVEST: Manual and mechanical, in mid-September
FERMENTATION: Maceration of the skins for 6 hours to extract the aromas.
AGING: Fermentation in stainless steel tanks at a controlled temperature of 16°C.
GASTRONOMY: Ideal for accompanying white meats and all kinds of mild fish. It also pairs very well with paellas and pastas. Serve between 5-6°C.
SIGHT: Pale yellow with greenish reflections, it is clean and bright.
SMELL: A wide aromatic range in which fresh fruit predominates, mainly stone fruit such as peach and apricot, combined with white-fleshed fruit like pear, melon, and sour apple. Floral notes reminiscent of almond blossom and chamomile with a slight touch of Mediterranean aromatic herbs like fennel and rosemary, which are very characteristic of the variety.
PALATE: It is voluminous and unctuous, yet fresh, due to its good acidity. It features a mineral touch with a saline note that makes it complex, persistent, and which structures and harmonizes this great wine, with a pronounced Mediterranean character.
